Sky Acres Winery is an award-winning operation perched on 50 acres of pristine woodlands and pasture in Bedminster. The name reflects the founders Meera and Vijay Singh’s love of aviation. In 2011, the pair began making wine. Perhaps unsurprisingly, Dr. Singh, who is a world recognized biotech scientist celebrated for developing a revolutionary tool in the production of biopharmaceuticals, likes to do things at the winery in his own way.
In his quest to create innovation in the cellar, Dr. Singh developed a GOfermentor; it requires no washing and can be set up in minutes, saving time and resources. Meera Singh, meanwhile, is a graphic designer by trade and the former partner in an NYC design company, and applies her vision and talent to art and wine. She is the blender and taster-in-chief at Sky Acres.
The estate includes a sustainably farmed research plot with plantings of Foch, Cabernet Franc, and Chardonnay. The innovative pair is testing a VinoRobo in the vineyard to take care of mundane tasks from harvesting to spraying. For now, the pair is sourcing grapes from growers for their wine.
